We’re on Inside the Factory
People ask me all the time: what actually are marshmallows?
Are they sweets? Are they nostalgic? Are they science? Are they… pink?
Well, tonight’s episode of Inside the Factory on BBC One answers all of that..and yes iI’l be the one spilling the tea. We’re part of a 15 minute segment exploring how marshmallows are made and where they come from - from their surprisingly ancient beginnings to our unexpected flavour twists (marshmallows that taste like cocktails)
Cherry Healey popped into see us and I have to say straight away: she is every bit as warm, curious and generous as you hope she’ll be. She asked proper questions. She wore a marshmallowy pink jumper (not an accident). She listened. She laughed. She took genuine interest in the why behind what we do, not just the sugar and the fluff.

If you’ve ever watched the programme, you’ll know why it’s such a pleasure. It takes foods we think we understand and gently pulls them apart, revealing the cleverness, the history and the sheer ingenuity behind everyday treats. It’s curious without being patronising, nerdy without being dry, and somehow manages to make you feel both informed and comforted at the same time. The sort of television that leaves you saying, oh, that’s interesting, rather than I should have paid more attention in school.
We talked marshmallow history, texture, ingredients, technique- why air matters (listen for the bubbles) why sugar behaves, why we’re so particular about how things are whipped, folded and finished. If you’ve ever wondered why our marshmallows feel different..this episode quietly explains it all.
