Whoah..It's the whoppaloassus
For the past few weeks we’ve been unusually quiet.
Quiet on Instagram. Quiet on emails. Quiet in the family WhatsApp. (Sorry Mum. We’ll get back to you soon)
The reason is currently sitting in the brand new Biscuitorium at Fortnum & Mason and weighs a rather excessive 400g!
Meet the Whoppalossus.
Created exclusively by us for the opening of Fortnum’s new Biscuitorium, this is the biggest biscuit the store has ever launched. A giant, shareable, chocolate covered spectacle inspired loosely by a Wagon Wheel, if Wagon Wheels relocated to Mayfair and developed a taste for single origin chocolate.
We’ve been working with Fortnums for nearly ten years now, first whipping up marshmallows whipping up marshmallows then marshmallow teacakes and now working with the lovely team. And what an event this is…The new mezzanine space at Fortnum’s is dedicated entirely to biscuits. This is a full biscuit wonderland. It’s theatrical, immersive and gloriously over the top. It even has its own bespoke biscuit scent!

Exactly our sort of thing.
At the centre of it all sits the Whoppalossus. Two giant oatey biscuits sandwiched with layers of freshly piped marshmallow fluff and either salted almond caramel or pure Sicilian pistachio paste, before being coated in thick chocolate using a completely custom mould designed in a signature Fortnum’s shape.

Each one is assembled by hand in our layer by layer, more like building a cake than making a biscuit. The Milk Chocolate & Salted Almond Caramel version is gooey, nostalgic and deeply indulgent. Sweet/ salty caramel meets soft vanilla marshmallow beneath a crunchy chocolate shell.
The Dark Chocolate Pistachio & Raspberry version is slightly more dramatic. Jammy raspberry marshmallow fluff layered with pure pistachio paste and dark chocolate. Rich, sharp, grown up and still a little ridiculous.
Truthfully, they’ve taken longer to make than we imagined. Giant biscuits, it turns out, come with giant logistical problems. But first times usually do. And seeing them sitting beneath the lights of Piccadilly among Fortnum’s extraordinary new biscuit displays has made every sticky second worth it.

Mostly though, we want to say ta very much to our brilliant marshmallowist team, for somehow hand finishing thousands of these monsters with patience and precision.

And to Fortnum’s, for continuing to trust us with the kind of playful, ambitious ideas that make our bakery very happy and our production schedules mildly terrifying.
