Recipe- Gooey Marshmallow Cookie

I think we can all agree that the lockdown baking- at –home-ometer started on Banana Bread and has now swung through to Cookies. I cannot even take a glimpse at Instagram without being confronted by cookies. And I’m here for it. I love a cookie. As an obsessive tea drinker as it means there is always something delicious nearby for a surreptitious dunk. The chewier, the meltier, the better. Here is my recipe for gooey marshmallow cookies. This is another easy one for baking with children and will entertain them for, oooooh, at least 8 minutes- you’re welcome.

How to find calm in the everyday

The reality of all our lives is we’re in crisis. Because, well, we’re told we are. And even if it has yet to physically affect you or your family or your friends then the daily shake down of death tolls, the finger pointing and adjusting to a life in quarantine will certainly have you on edge. So how do you find joy? How are you still ‘you’ if ‘you’ went out to work or to gigs or yoga or had a local? For me, this last month has been about discovering the small, simple things that bring pleasure. And I thought I’d share them with you.

Packaging is something we care a lot about here. We were lucky to have a great designer and work with some wonderful suppliers and printers. Recipe- Easter S'mores Granola Bars

You can use any berries or combinations of nuts-seeds-fruits you like, or have in the cupboard. I always include marshmallows because they are strong currency around here and sometimes I like to drizzle these bars with melted white chocolate- as for this photo- for an extra chocolate boost. If you want to do the same, you will need about 100g white chocolate (which is about half a Milky Bar egg) This is a lovely post Easter recipe – one which will fill you with hope, comfort and a bit of chocolate.

I’m here. Keeping going. Sending out marshmallows...

So, if I’m perfectly honest with myself things haven’t felt ‘right’ for a while.  Politically, socially, you know, the big picture things. We all kept on acting up, eating out, buying the unnecessary. But, really, there was a niggle wasn’t there. A little ‘Is this ok?’ niggle. The Brexit divide that dragged on and was used as a quick way to shrug off problems seemed only symptomatic of more fundamental issues- from globalization, racism, economic insecurity, the climate crisis- it was all there. Simmering.
